Eggs

24 corn tortillas cut into chip pieces

Breakfast sausage

Red Sauce Ingredients 👇🏻

4 cups of water

8 roma tomatoes

1 white onion

4 guajillo chiles

4-5 japon chiles

4-5 garlic cloves 

1 tbsp @betterthanbouillon chicken base

1 tsp salt

1 tbsp oregano

1 tsp black pepper

Optional Toppings 👇🏻

Sour cream drizzle

Cotija cheese

directions

First cut your tortillas into your preferred chip shape. Get them into the air fryer at 350° for 10-12 minutes(depending on how big or full your basket is) basically cook them until crispy but toss them around frequently. You can also oil fry them. Next we’ll make the sauce.

Throw the tomatoes, onion, chiles, and garlic into the water. Boil for a 5-10 minutes until tender. Throw it into a blender, blend. Add in the chicken base and seasonings, blend lightly to incorporate. Get some oil in a hot pan, add your sauce, cook until the color changes and it starts to thicken up a bit. Now drop in those hot and crispy homemade chips. Give it a good mixin’. Immediately hit it with sour cream drizzle and cotija cheese. Serve immediately with fried eggs and breakfast sausage. Enjoy your life.
